Easy and Tasty Crispy Crackers with Feta Cheese (finger food recipes)
These Cheese Crackers are the perfect snack for every party or event. They are easy to prepare even a day or two in advance and still remain crispy when sealed in an airtight box.
If you are looking for a snack that you can take to work either for your birthday when celebrating your first or last day, or on any other occasion, this is a perfect finger food snack, easy to reach for and grab.
We have tried preparing these cheese sticks also with other types of cheese however the Feta Cheese in here gave us surprisingly good results, both in texture and aroma of the sticks.
These crispy sticks also have a lower and naturally accruing gluten content, due to the use of spelt flour, which is also a great source of Phosphor. Feta Cheese Crispy Crackers
Ingredients
For the Dough
- 270 g Spelt Flour (type 630)
- 200 g Feta Cheese
- 1 Egg Yolk
- 120 g Melted Butter
- 1 t.s. Brown Sugar or Date Syrup
- ½ t.s. Salt
- 70 g. Yogurt
- 1 t.s. Baking Soda
For the Topping
- 2 Egg Yolks
- 2 e.s. Sesame Seeds and other seeds and herbs of your choice
Instructions
- Preheat the Oven to 180 °C / 356 ° F
- Mix the Yogurt and the Baking Soda in a small bowl and let it rest for a minute. Crush the Feta Cheese into small pieces and add all the ingredients for the Dough, including the yogurt-soda mix, in a big mixing bowl. Now knead all the ingredients together till the Dough is formed.
- Pack the Dough in a plastic Foil and let it rest in the fridge for 20 minutes.
- Split the Dough into four (4) equal parts.
- Roll out the dough into a Quadrat form — ½ cm or ¼ Inch thick. Cut into stripes 15 cm L x 1 cm B (in Inch: 6 L x 0,4 B)
- Smear the raw sticks with egg yolk and sprinkle with sesame seeds. Place the sticks on a backing paper and bake 10–11 minutes.
